Paul Durand is the Chef Patron and co-owner of Manifest, a unique restaurant in Liverpool’s Baltic Triangle, opened in 2022 with his wife, Charlotte Jones. The restaurant, inspired by Paul’s travels around Europe and Liverpool’s shipping history, combines relaxed dining with modern fine dining, showcasing local Merseyside produce. Paul learned and honed his kitchen skills first at a Liverpool bistro, then went on to Paul Kitching’s 21212 in Edinburgh; became Head Chef at Gary Usher’s The Sticky Walnut in Chester and then moved onto two Michelin-Starred Moor Hall in Aughton. Manifest has earned recognition, including being listed in the National Restaurant Awards Top 100 and the Michelin Guide. Paul and Charlotte’s vision brings a human touch and interactive experience to hospitality.
