  Ollie joined Gilpin in 2023 and was quickly recognised by Michelin and awarded 1 star at SOURCE, a recently launched offering at The Gilpin Hotel. After working for a decade at Heston Blumenthal’s famed three Michelin Star restaurant The Fat Duck (once named the Worlds Best Restaurant) Ollie wanted a platform to pull together all his experience and shape his own style focusing on the sourcing of quality ingredients and immaculate cooking.
