Iain ThomasChefIain started his career at the Midland hotel 22 years ago. His formal training continued during his years in Scotland at 21212, Rocpool and the seafood ristorante.
Over the last 7 years back in Manchester (Edinburgh Castle, The Alan, The Pearl) – Iain has honed his style of British cooking focusing on seasonal, sustainable and local produce – working with suppliers like Littlewoods butchers and crafty cheesman – he is often found reinventing classic and nostalgic dishes to please his customers.
